Mutations of Laurent polynomials and flat families with toric fibers

In recent work, I have shown that certain birational transformations mapping a Laurent polynomial to another Laurent polynomial correspond to deformations between the associated toric varieties. I will discuss this result and its relevance in the larger context of mirror symmetry and the classification of Fano varieties.
